If you’ve been following me for a while, you know I believe that healthy eating should never be bland or boring, and it shouldn’t mean giving up the flavors you love. As both a Registered Dietitian and trained visual artist, I’m always looking for ways to bridge the gap between science-based nutrition and beautiful, culturally inspired food. That’s where this Matcha Covered Strawberry recipe comes in. I’m taking the earthy, slightly bitter profile of matcha, a staple in many East Asian households – and pairing it with the sweet and tartness of vitamin C-rich strawberries. It’s a “healthy-ish” dessert that honors the tradition of tea while providing a powerful dose of antioxidants and EGCG for metabolic health.

Ingredients

Strawberries – Washed and dried. Make sure there’s no water on them, as this will make the chocolate hard to stick to it!
Matcha Green Tea Powder – When choosing your matcha, look for a bright, vibrant green color. If it looks dull or brownish, it has oxidized and lost many of its beneficial properties (and its beautiful flavor!).
White Chocolate – As a busy twin mom who is pressed for time, I used white chocolate chips because they melt faster!
How to Make Matcha Covered Strawberry: Step by Step Instructions with Photos
- Step 1: In the microwave or a double boiler, melt the white chocolate until it’s completely melted.
- Step 2: Add the matcha green tea powder to the white chocolate and stir until completely combined.
- Step 3: Holding the strawberry by the green stem, dip it into the matcha mixture and rotate to coat. Let the excess drip off.
- Step 4: Place onto wax or parchment paper and refrigerate for about 20 mins until the shell is firm and “snaps.”
Optional Step

Note: This step is optional, because it will make the final product sweeter. And maybe it’s because I’m around Asians, we prefer it less sweet – without the extra white chocolate drizzle. But it makes it look much more pretty! If you would like to add a white chocolate design, read ahead:
Step 5: To add a white chocolate design, melt the extra white chocolate. Remove strawberries from the fridge and drizzle white chocolate on top with a spoon. Returned to fridge to set for another 10 mins.

Is this a healthy dessert?
It is healthier than many other desserts because of the ingredients used. Strawberries provide vitamin C, antioxidants, folate and potassium. The Matcha contains L-theanine, which promotes a state of relaxation without drowsiness—the perfect antidote to a stressful day.

Can I freeze this recipe?
Freezing is not recommended.
How long does this last? That depends,
Room Temperature:
They should be good for up to 24 hours. This is the best way to maintain the flavor of the berry and the texture of the matcha shell.
Storage: Keep them in a cool, dry place away from direct sunlight. Do not use an airtight container; instead, cover them loosely with foil or parchment paper to allow for airflow.
In the Refrigerator:
They should last up to 48 hours.
The “Sweat” Factor: After about 24 hours in the fridge, you may notice small beads of moisture (condensation) on the shell. This is called “sweating.” While they are still safe to eat, the shell might become a bit soft or sticky.
Pro-Tip for Storage: Line an airtight container with paper towels before adding the berries. The towels will absorb excess moisture and keep the berries fresher for longer.

Matcha Covered Strawberry
Equipment
- 1 baking sheet
- wax or parchment paper
Ingredients
- 3 cups / 454 g / 16 oz whole strawberries, rinsed and patted dry
- 1.5 cups / 180 g / 6 oz white chocolate
- 2 tsps / 8 g / 0.3 oz matcha green tea powder
Optional Ingredients
- 1/4 cups / 60 g / 2 oz white chocolate for white chocolate drizzle
Instructions
- Line a baking sheet with wax or parchment paper
- In a double boiler or the microwave, melt the white chocolate. If using the microwave, melt the chocolate in 25 sec intervals to avoid burning.
- Dip your strawberries in and swirl.
- Place on wax lined baking sheet and refrigerate for 20 mins.
Optional Instructions
- If you are doing the white chocolate drizzle, melt it in the separate bowl.
- Remove strawberries with matcha from fridge and drizzle on top of each with a small spoon.
- Return to the fridge to set for another 10 mins.
