Eggs kimchi is a quick and easy meal that can be enjoyed anytime of day: breakfast, lunch or dinner. You might be new to kimchi, to its bold, spicy flavor and texture. One of the best ways to enjoy a food you are less familiar with is to pair it with something you already know and love, like eggs. The combination of eggs and kimchi when paired with a smart carbohydrate side dish like quinoa rice make a complete and balanced healthy meal. Did I also mention, this recipe comes together in less than 5 minutes? Grab your frying pan and spatula and get ready to make this easy budget friendly and nutritious meal!

Ingredients

Recipe ingredients: kimchi, eggs, sesame oil, sugar, green onions and sesame seeds.

Eggs – Are the main source of protein in this dish. They are quick cooking and easy to access, making them the perfect pairing with kimchi

 

Kimchi – This fermented cabbage dish has a strong and bold flavor. Half a cup is a serving that goes into this dish. 

 

Sugar – Sugar helps to balance out the flavors. Kimchi tends to have a more umami and pungent taste, so sugar helps to tone it down for a more balanced taste. 

 

Sesame Oil – Similar to sugar, it adds flavor to this dish. But the flavor added is the richness of umami.

 

Green Onions (optional) – Used in most Asian dishes, it’s a great, final topping that adds color, texture and flavor. 

 

Sesame Seeds (optional) – A nice garnish that adds more sesame flavor.

Can I make this meal ahead of time? 

This dish tastes best freshly made. However, if you want to meal prep it, you can. Multiply the recipe by however many portions you need. Once made, cool completely and store in an airtight container in the refrigerator. When it’s time to eat, reheat in the microwave and serve. Recipe will keep for no more than 4-5 days.

Can I add other condiments, such as soy sauce, fish sauce or gochujang? 

Because the sodium quantity in kimchi is already high, I didn’t add any more sauces that are higher in sodium. I also didn’t add any salt to this recipe for this reason. I kept the additions of sesame oil and sugar because they add depth to the dish without adding any extra sodium. 

Is kimchi good on an egg sandwich? 

You certainly can eat this with bread! As an Asian dietitian, my favourite side dish to go with eggs kimchi is quinoa rice. But this also tastes amazing with whole grain toast, plain rice, cous cous… use whatever you like and have available in your pantry!

Are kimchi and eggs healthy? 

One egg provides 6 grams of protein and is a complete protein source, containing all nine amino acids. Eggs also have 13 essential vitamins and minerals, including vitamin D, vitamin B12, phosphorus and riboflavin and leucine (important for protein synthesis and eye health). Kimchi is fermented cabbage (a vegetable), which provides the gut health benefits and fiber. Combined together they make for a nutritious and delicious meal!

Is kimchi everyday OK? 

Yes. Korean culture generally consumes kimchi everyday, sometimes multiple times a day. However it might be best to limit your consumption if you need to watch your sodium intake.

Is kimchi good for gut health? 

A half cup serving of kimchi is a serving of vegetables. It is known for its probiotics, gut health benefits as a fermented food. However, during the cooking process of the kimchi in this recipe, we are heating it so it may lose some of the health benefits. But it still is a great source of dietary fiber. If you want to maintain live probiotics, try scrambling the eggs first and adding the kimchi at the end. 

How long does kimchi last? 

Kimchi lasts 3-6 months in the refrigerator. However as the fermentation process continues, the longer it is kept for the more sour it will taste.

This is a simple yet satisfying recipe comes together in five minutes and provides you with complete protein from the eggs and gut health benefits from the kimchi. Make it for a quick and easy breakfast, lunch or dinner!

Ingredients
  

  • 1 tsp cooking oil
  • ½ cup kimchi
  • 2 large eggs
  • 1/2 tsp sesame oil
  • 1/4 tsp sugar
  • 1 green onion, chopped optional
  • sesame seeds optional

Instructions
 

  • Using kitchen scissors, cut kimchi into bite sized pieces and set aside.
  • In a small bowl, whisk eggs, sesame oil and sugar together and set aside.
  • Heat oil in a skillet over medium high heat. Add kimchi, cook until softened, about 1 minute.
  • Add egg mixture. Scramble together for 2-3 minutes until kimchi is completely coated in egg.
  • Remove from heat. Top with chopped onions and sesame seeds if using.
  • Serve with rice, bread or your favorite carbohydrate side dish.
