Eggs Kimchi

- 1 tsp cooking oil
- ½ cup kimchi
- 2 large eggs
- 1/2 tsp sesame oil
- 1/4 tsp sugar
- 1 green onion, chopped optional
- sesame seeds optional
Using kitchen scissors, cut kimchi into bite sized pieces and set aside.
In a small bowl, whisk eggs, sesame oil and sugar together and set aside.
Heat oil in a skillet over medium high heat. Add kimchi, cook until softened, about 1 minute.
Add egg mixture. Scramble together for 2-3 minutes until kimchi is completely coated in egg.
Remove from heat. Top with chopped onions and sesame seeds if using.
Serve with rice, bread or your favorite carbohydrate side dish.
