Eggs Kimchi

Ingredients
  

  • 1 tsp cooking oil
  • ½ cup kimchi
  • 2 large eggs
  • 1/2 tsp sesame oil
  • 1/4 tsp sugar
  • 1 green onion, chopped optional
  • sesame seeds optional

Instructions
 

  • Using kitchen scissors, cut kimchi into bite sized pieces and set aside.
  • In a small bowl, whisk eggs, sesame oil and sugar together and set aside.
  • Heat oil in a skillet over medium high heat. Add kimchi, cook until softened, about 1 minute.
  • Add egg mixture. Scramble together for 2-3 minutes until kimchi is completely coated in egg.
  • Remove from heat. Top with chopped onions and sesame seeds if using.
  • Serve with rice, bread or your favorite carbohydrate side dish.
