Rice and Corn (Video)

If you’re looking for a different side dish other than your usual white rice, this one’s for you: Rice and corn! Inspired by Mexican arroz con maíz it combines jasmine rice, corn, green onions, butter and optional soy sauce to make a delicious and flavorful side dish. As a dietitian, corn adds more fiber and nutrients to plain white rice. As an Asian, of course I’m going to show you how you can easily make it in your rice cooker (haha)! Serve alongside a protein and some vegetables for a complete, delicious meal.

 

Ingredients

Rice – I use the typical jasmine rice for this recipe. I use 2 rice cups. Each rice cup is ¾ cup of a standard cup. 

Corn – You can use fresh corn on the cob, frozen or canned corn for this. 2 cups of frozen or canned corn is about 2 medium corn cobs, with the kernels removed. I find the best way to remove the kernels is to stand the corn on the cob vertically on a cutting board and cut the kernels off downward.

Green Onion – This adds a unique flavor and nice green color to the side dish. 

 

Butter – Traditionally as an Asian, I don’t put butter in my rice. But the first time I tried, it… it was DELICIOUS. Everyone has different preferences for the amount of butter they like, so it’s best to allow eaters to add however much they like. 

Soy Sauce – This is optional, but it makes the rice and corn umami and delicious. The corn adds a sweetness and the saltiness of soy sauce gives a really balanced flavor.

Can I make this recipe on the stove top?

Yes! To make this on a stove top, add rice and water to the pot the way you normally would make rice – without the corn kernels. Add corn, and simmer on the stovetop for about 12 -15 mins until the rice is cooked. 

Can I freeze this recipe? 

This recipe freezes very well and is perfect for meal prep. Cool the rice down in thin layers (like on a baking sheet). Then transfer to freezer safe containers or bags before putting them into the freezer. Use within 2-3 months.

Is rice and corn healthy? 

 

Rice and corn is a healthy alternative to plain white rice. The corn adds fiber, lowers the glycemic index and adds vitamin C and b-vitamins. The combination of both together also lowers the calories and is naturally gluten-free.

Equipment

  • 1 rice cooker

Ingredients
  

  • 2 rice cups jasmine rice 1 rice cup = 3/4 standard cup
  • 2 cups corn kernels or 2 medium corn on the cob, kernels removed
  • 1 green onion, sliced
  • butter to taste
  • 1-2 Tbsp / (15-30 mL) soy sauce optional

Instructions
 

  • Add washed rice to the rice cooker inner pot.
  • Add corn kernels to the rice cooker inner pot.
  • Add water to line 2. You want to add water to the inner pot as though you were not adding in corn.
  • Cook on white rice or mixed setting.
  • When the bell dings, fluff up the rice and corn together with a rice paddle.
  • Remove from pot and top with butter, green onions and soy sauce if using.
