Rice and Corn

This rice and corn recipe is inspired by the Mexican dish aroz con maĆ­z. It's like your usual white rice side dish, but elevated with more fiber and nutrients. This is how you make it in your rice cooker!

Equipment

  • 1 rice cooker

Ingredients
  

  • 2 rice cups jasmine rice 1 rice cup = 3/4 standard cup
  • 2 cups corn kernels or 2 medium corn on the cob, kernels removed
  • 1 green onion, sliced
  • butter to taste
  • 1-2 Tbsp / (15-30 mL) soy sauce optional

Instructions
 

  • Add washed rice to the rice cooker inner pot.
  • Add corn kernels to the rice cooker inner pot.
  • Add water to line 2. You want to add water to the inner pot as though you were not adding in corn.
  • Cook on white rice or mixed setting.
  • When the bell dings, fluff up the rice and corn together with a rice paddle.
  • Remove from pot and top with butter, green onions and soy sauce if using.
