Rice and Corn
This rice and corn recipe is inspired by the Mexican dish aroz con maĆz. It's like your usual white rice side dish, but elevated with more fiber and nutrients. This is how you make it in your rice cooker!

- 2 rice cups jasmine rice 1 rice cup = 3/4 standard cup
- 2 cups corn kernels or 2 medium corn on the cob, kernels removed
- 1 green onion, sliced
- butter to taste
- 1-2 Tbsp / (15-30 mL) soy sauce optional
Add washed rice to the rice cooker inner pot.
Add corn kernels to the rice cooker inner pot.
Add water to line 2. You want to add water to the inner pot as though you were not adding in corn.
Cook on white rice or mixed setting.
When the bell dings, fluff up the rice and corn together with a rice paddle.
Remove from pot and top with butter, green onions and soy sauce if using.
