Recipe: Apple Cinnamon Overnight Oats

​Who doesn’t love a warm breakfast, especially in the winter. I live on the Hamilton mountain, where we get more snow than other parts of Hamilton.

But I have learned to embrace winter. I love seeing my enthusiastic rescue dog – who came all the way from all the way from Tennessee –  jump and frolic in the snow. If my sweet country gal can embrace the winter, why can’t I?

I find cold, dark mornings easier to wake up to when I have a good breakfast. One where I didn’t have to spend a lot of time making in the morning. One that I can take out of the fridge and put it in the microwave. Combined with fresh coffee, and I am feeling better already!

Here is one of my favourite winter breakfasts: Apple Cinnamon Overnight Oats. A comforting and familiar everyday breakfast can help you get going in the morning!

Prep Time 5 mins | Total Time  5 mins | Serves 1

Ingredients

½ cup old fashioned rolled oats
½ cup unsweetened milk of your choice (soy, almond, cow, hemp, rice, etc).
¼ cup plain Greek yogurt (this makes the oats creamier)
¼ tsp or a pinch table salt or sea salt
1 to 2 tsps honey or maple syrup, to taste
¼ tsp ground cinnamon
1/8 tsp or a pinch ground nutmeg
½ cup diced apples. I would go for a variety that is more crisp, such as Royal Gala, Cortland or Empire.
1 Tbsp chopped walnut or pecans for topping

Instructions

  1. In a bowl or 16 oz (500mL) jar, add oats, milk yogurt, salt, honey or maple syrup. Mix in cinnamon and nutmeg. Cover and refrigerate overnight.
  2. The next morning: Top with diced apples and chopped nuts. For warm oatmeal, heat up in the microwave.
